I use flour that is has been stone ground and non bleached to create a flavorful and satisfying loaf of bread. Buy using the stone ground flour it has been ground with the husk and bran of the kernel., this give our loafs a brown color.
When panning, we use Viking style pans which are shorter and wider. and create less of a puff top crust.
